Jeff's Vegetable Soup
(Low salt)
Meat
1 pound meat
Hillshire's long sausage, Jimmy Dean sausage, or Hamburger (in order of
preference)
Brown and drain
Vegetables
2 medium potatoes-cubed
1 large onion - chopped
1 package (1 lb) gumbo vegetables (or 1 package mixed vegatables and ½ package okra)
3-4 cloves fresh garlic, minced
2 cans (14.5 oz) stewed (or whole) tomatoes (prefer "no salt added") - crushed
1 can tomato sauce (8 oz) (no salt)
1 can (10 -14 oz) chicken broth-low salt
½ cup water
½ stick butter
1 tablespoon vegetable oil or corn oil
Cook vegetables in water and butter on med-hi until onions are almost clear.
Seasonings
1 cube(s) chicken (or beef) bouillon (try "without MSG") - dissolve in water
(1 min. in microwave)
2 tablespoon light brown sugar, molasses, or plain sugar
1/4 teaspoon black pepper
1/4 teaspoon oregano
1/4 teaspoon thyme
1 teaspoon celery flakes (optional)
1 tablespoon parsley flakes (or more)
3 shots hot sauce (Texas Pete)
1 teaspoon worcestershire sauce
water to fill pot - Jeff uses a 4.5 liter pot
Combine ingredients. Cook on low, simmering for at least 1 hour, stirring about every 15 minutes. Or cook in pressure cooker steamming for 12 to 15 minutes.
Excellent with corn bread. Freezes well.
